Easy Spring Chicken Spinach and Pepper

This Easy Spring Chicken with Spinach and Pepper dish is sure to be a family favorite! This quick recipe is easy to put together for any family dinner. (Serves 3)

Ingredients

  • 3 Chicken Filets
  • 2 tbsp Pancetta or Bacon (Optional)
  • 1 Tbs Extra-Virgin Olive Oil 
  • 4 Garlic cloves, minced
  • ½ cup Chicken Broth
  • 1 cup Red Pepper, small diced
  • 2 cups Spinach
  • Kosher Salt to taste
  • Freshly Ground Black Pepper to taste
  •  

    Preparation

    1. In a cast iron pan or oven safe pan, heat the oil, add the pancetta (optional) and garlic. Cook until fragrant.
    2. Add the chicken filets. Sprinkle with salt and pepper.
    3. Cook for about 8 minutes, flipping sides half way through.
    4. Remove from stove and add the chicken broth and red pepper.
    5. Broil for 5-7 minutes or until golden brown. Remove from oven.
    6. Add the fresh spinach and tuck in under the chicken to quickly cook with the warmth of the chicken and broth.
    7. Serve immediately bon appetit.
