Our Recommended Recipes for Farm Fresh Basket (Week of April 18)

Thank you for ordering a Rootastes Farm Fresh basket! We hope you’re enjoying your fresh, locally grown produce, meats, and other Boston-based goodies. If you’re looking for inspiration or to mix up your go-to recipes, we’ll be sharing a few of our favorites every week that can be prepared using the ingredients in that week’s basket.

This week’s recipes will work with ingredients included in April 18, 2020’s baskets.

 

Chef Crafted Recipes

This Rainbow Radish and Asparagus Ensalade is a refreshing dish full of Spring flair! Using Spring ingredients, this dish will definitely bring  fresh, vibrant colors to any meal. Our Easy Spring Chicken with Spinach and Pepper dish is also a must-try!  This quick and easy dish and sure to be a family favorite.

Our Spring Forward Vegi Vegi is an old-time classic in the stockpot, but who needs soup when you could have all the good stuff without it? Roasted, garlicky baby potatoes and rainbow carrots, topped off with a savory, colorful pesto sauce. We are including Fresh Zen's Ginger Scallion Pesto sauce in our baskets for this week so definitely give a try!

Superb Salads

Vegetables are most easily enjoyed in a salad, but that doesn’t mean they have to be boring or the same old same old. The roasted radish and asparagus salad is a zing of spring and served with a zippy green onion vinaigrette. The same vegetables can also be tossed into a potato salad. This recipe includes a tangy dressing.

Get your greens in with a spinach and radish salad with feta, dressed with a simple red wine vinaigrette and dill. For a bright and beautiful option, try the Asparagus Salad with Lemon Vinaigrette.

Scrumptious Sautés

Enjoy sautés as a side or on their own. This asparagus radish sauté is tossed with shallots and lemon zest for extra flavor. For a different, quicker take, sautéed radishes with spinach is a great go-to. If you decide to give any of these recipes a try, let us know what you think.
