For a healthy and vegetarian alternative, Queen’s Greens Gemstone Mix Salad with a Refreshing Champagne Apple Vinaigrette tosses broccoli, tomatoes, red cabbage, onions, apples, and pears atop a gemstone mix from Queen’s Greens and red leaf lettuce. This jewel tone salad is regal and delicious! You’ll want to make a double batch of that vinaigrette.

Ingredients

  • Queen’s Greens Gemstone Mix
  • Red leaf lettuce
  • ¾ c. broccoli, cut into small miniature florets
  • ¾ c. tomatoes, diced small
  • 1 c. of shaved red cabbage
  • ½ c. of shaved cippolini yellow onions
  • Red scallions, sliced thinly on the bias
  • Apples, divided into 2 Tbsp diced brunoise and ½ c. julienne sliced
  • ½ Asian pear, julienne sliced
  • Fresh parsley, chopped
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Champagne Apple Vinaigrette

  • 1 Tbsp shallots, diced brunoise
  • 2 Tbsp apples, diced brunoise
  • 2 Tbsp apple cider
  • 1 Tbsp champagne vinegar
  • 1 Tbsp dijon mustard
  • ½ tsp blue agave
  • Extra virgin olive oil, to emulsify
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Preparations

  1. In a mixing bowl, add shallots, apples, apple cider, champagne vinegar, dijon mustard, and blue agave. Then slowly drizzle extra virgin olive oil into the bowl and whisk simultaneously until the vinaigrette is completely emulsified.
  2. In a large mixing bowl, add the gemstone mix and red leaf lettuce and cut into large mouth-sized pieces.
  3. Place into a bowl and carefully dress with the vinaigrette on the outer edges of the salad and incorporate it towards the center of the bowl.
  4. Once incorporated, layer the rest of the ingredients on top and add a final drizzle of the champagne apple vinaigrette over the salad and garnish with fresh parsley and scallions.
  5. Serve immediately and enjoy!
