Recommended Recipes for Farm Fresh Basket (Week of August 22)

Thank you for ordering a Rootastes Farm Fresh basket! We hope you’re enjoying your fresh, locally grown produce, meats, and other Boston-based goodies.

If you’re looking for inspiration or to mix up your go-to recipes, we’ll be sharing a few of our favorites every week that can be prepared using the ingredients in that week’s basket.

This week’s recipes will work with ingredients included in August 22, 2020’s baskets.

Rootastes Chefs’ Curated Recipes

We’re so excited about this week’s salmon add-on from Red’s Best! It’s sourced fresh from the Gulf of Maine. Our chefs recommend searing it and serving with a lemon garlic butter. While delicious on its own, be sure to continue following the recipe for fresh pasta alfredo and roasted carrots. Talk about a divine dinner! Check out the spread here.

Prefer to stick with chicken? Our oven roasted chicken is always a hit, and our chefs are sharing one variation of it in this oven roasted chicken with caramelized onion and tomato jam recipe. (Psst! It’s the perfect way to preserve your extra tomatoes!)

If you're looking for a bright salad for the summer we have you covered! This bright and refreshing salad is topped with Golden Beets and a splash of Lemon White Balsamic Vinaigrette

Chef Favorites

At this point in the season, your kitchen is probably overflowing with zucchini, and we can only eat so much zucchini bread, right? (Even with chocolate! Though that’s hard to admit.)

Instead, cut it into medallions and toss it with tomatoes, onion, and thyme for a juicy side at your next barbecue. Check out Skillet Zucchini.

Or, cut it lengthwise (like a pickle), sprinkle with Parmesan and a blend of five dried herbs and spices, and pop in the oven for a satisfying snack that’s ready in 20 minutes! You’ll want to make an extra batch of Baked Parmesan Zucchini.

If you decide to give any of these recipes a try, let us know what you think. We’d also love to see how you’re getting crafty in the kitchen with your basket, so be sure to share your favorite recipes below.
